Chickpea Harissa Stew

INGREDIENTS

  • 1 yellow onion chopped, about 1 cup

  • 2 red or yellow bell peppers chopped, about 2 cups

  • 6 cloves garlic minced, about 2 tablespoons

  • 2 tablespoons harissa paste

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1⁄2 teaspoon sea salt

  • 1⁄2 teaspoon freshly ground black pepper

  • 2 (15-oz) cans chickpeas, undrained

  • 2 (15-oz) cans low-sodium fire roasted tomatoes with their juices NOTE: You can also use crushed tomatoes

  • 6-8 oz baby spinach, about 6-8 cups

    GARNISH

  • Fresh parsley

  • Fresh lemon juice

  • Toasted pita bread

INSTRUCTIONS

  • Sauté the Veggies: In a large pan over medium heat, cook onions and bell peppers, stirring occasionally, 3 to 4 minutes, until soft. Add water 1 to 2 tablespoons at a time, as needed to prevent sticking. Once the onions are translucent, add the garlic and cook for a minute.

  • Add the Spices: Add harissa, cumin, paprika, salt and pepper to the pan. Cook for another minute until the spices become fragrant.

  • Simmer the Stew: Pour in the chickpeas and tomatoes. Bring the mixture to a boil, then reduce to a simmer. Let it cook for about 15-20 minutes, stirring occasionally.

  • Add the Spinach: Once wilted, remove from heat.

  • Season & Serve: Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley and a squeeze of fresh lemon juice. Serve with toasted pita bread, if desired.
